Sancocho with Chicken

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup TIO JORGE® Sofrito Mix
  • 5 lb TIO JORGE® Tropical Vegetable Mix
  • 5 cloves garlic minced
  • 2 medium tomatoes cored & chopped
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground achiote
  • 2 Bay Leaves
  • ½ teaspoon oregano
  • 1 3 to 4 lb. chicken, cut up into 10 pieces (cut each breast in half)
  • qts. Chicken broth or water
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup cilantro chopped (reserve ¼ cup for garnish)

Instructions

  • In a large pot heat the oil over low to medium heat.
  • Add onion and garlic; sauté 5 minutes.
  • Add the green peppers, tomatoes, cumin, achiote, bay leaves and oregano & continue to cook 5 more minutes.
  • Now add the chicken season with salt & pepper and cook until the tomatoes have broken down about 10 minutes.
  • Add the chicken broth, bring to a boil and Reduce the heat to medium-low and simmer for 15 minutes or until the chicken is tender.
  • Add the TIO JORGE® Tropical Vegetable Mix to soup pot & simmer an additional 20 minutes or until vegetables are tender.
  • Remove the bay leaves.
  • Stir in the cilantro, check seasoning and adjust if necessary.
  • Serve in large soup bowls, dividing the chicken and vegetables evenly. Garnish with the remaining cilantro.
