In a large pot heat the oil over low to medium heat.
Add onion and garlic; sauté 5 minutes.
Add the green peppers, tomatoes, cumin, achiote, bay leaves and oregano & continue to cook 5 more minutes.
Now add the chicken season with salt & pepper and cook until the tomatoes have broken down about 10 minutes.
Add the chicken broth, bring to a boil and Reduce the heat to medium-low and simmer for 15 minutes or until the chicken is tender.
Add the TIO JORGE® Tropical Vegetable Mix to soup pot & simmer an additional 20 minutes or until vegetables are tender.
Remove the bay leaves.
Stir in the cilantro, check seasoning and adjust if necessary.
Serve in large soup bowls, dividing the chicken and vegetables evenly. Garnish with the remaining cilantro.
