whole BIG BANANA® whole sweet plantains seasoned with Jerk with apple wood smoked bacon spice then wrapped
For the Bourbon Garlic BBQ Sauce

Apple Cider Vinegar

Bacon Fat or Lard

Ketchup

Brown Sugar

Guava Paste

L&P Sauce

Bourbon

Instructions
For the Sweet Plantains
Preheat charcoal grill.
Grill Bacon Wrapped Plantains until crispy and fully cooked.
Rotate often.
Brush with Bourbon Garlic BBQ Sauce and rotate a few times to Caramelize.
For the Bourbon Garlic BBQ Sauce
Place vinegar, bacon fat and garlic into a pot.
Bring to a simmer.
Cook for 20 minutes on medium low heat or until garlic is brown and soft.
Add rest of the ingredients and bring to a simmer.
Cook for 15 minutes on low heat.
Place ingredients into a blender.
Purée until smooth.
To Assemble
Season whole BIG BANANA® whole sweet plantains with Jerk apple wood smoked bacon spice then wrap.
