Ingredients
For the Sweet Plantain Mash

For the Pork Tenderloin

pork tenderloin
▢

olive oil

tsp
garlic powder
▢

tsp
smoked paprika
▢
Salt and pepper to taste
▢
splash of low-sodium broth or citrus juice
(optional)
For the Roasted Vegetables
▢

medium carrots, peeled and sliced into coins
▢
1
medium red onion, sliced into wedges
▢

olive oil
▢
Salt, pepper, and a pinch of rosemary or thyme
Instructions
Roast the Pork Tenderloin
Preheat oven to
400°F (204°C)
.
Rub pork with oil and seasoning.
Roast in a shallow pan for
20–25 minutes
, or until internal temp reaches
145°F (63°C)
.
Rest 5 minutes, then slice into medallions.
Roast Carrots and Red Onion
Toss sliced carrots and onion wedges with olive oil, rosemary, salt, and pepper.
Spread on a sheet pan in a single layer.
Roast at
400°F
for
20 minutes
, flipping halfway for even caramelization.

Place frozen
Sweet Plantain Mash
in oven-safe tray.
Bake at
400°F

12–15 minutes
