Turkey Shepherd’s Pie with Boniato Puree, Smoked Gouda Crust, and Butterbeans

Ingredients

For the Turkey Shepherd’s Pie Filling

  • 2 lbs ground turkey breast
  • 2 T. olive oil
  • ½ c. small diced onion
  • ½ c. small diced carrots
  • ½ c. frozen butter beans/lima beans
  • ¼ c. sun dried tomatoes julienne
  • 1 T. chopped garlic

For the Boniato Puree Topping

  • 6 c. TIO JORGE® Boniato Puree
  • ½ c. sliced green onion
  • 2 T. chopped cilantro
  • 2 tsp. Kosher salt
  • 2 T. chopped Jalapeño peppers

For the Smoked Gouda Cheese Crust

  • 1 c. grated smoked Gouda cheese
  • ½ c. Panko breadcrumbs
  • 3 T. olive oil

Instructions

For the Turkey Shepherd's Pie Filling

  • Preheat large skillet.
  • Add olive oil and heat up.
  • Add onions and carrots.
  • Caramelize.
  • Add turkey breast and lightly brown.
  • Add rest of ingredients and cook for 5 min.
  • Remove and drain excess fat.
  • Place meat into large casserole dish.

For the Boniato Puree Topping

  • Combine all ingredients in bowl.
  • Mix well.
  • Place into microwavable container and cover.
  • Heat in microwave until hot. ***Note: Increments of 2 min, stirring occasionally.

Smoked Gouda Cheese Crust

  • Combine all ingredients into mixing bowl and mix gently.

Building the Plate

  • Pre heat oven to 350°F.
  • Place warm turkey filling in casserole dish.
  • Place Boniato filling on top of turkey filling.
  • Place smoked Gouda cheese crust on top of Boniato.
  • Bake in oven for 20 min until bubbly and golden brown.
