
Bacon Wrapped Plantains with a Citrus-Chipotle Glaze


1. Preheat fryer to 350°F.
2. Wrap each plantain with the bacon and hold with a toothpick.
3. Fry the plantains until deep golden brown. (Making sure bacon is crispy)
4. Remove plantains to paper towels.
1. Place all the ingredients in the blender and puree.
2. While the blender is running add 2 chilis and taste.
3. Add more if needed. (keep in mind that you will be reducing this sauce and the heat will get more intense.
4. Once you have the heat level, place in a saucepan and heat over medium heat until it begins to bubble.
5. Carefully add the plantains & glaze them with the sauce.
