Ingredients

TIO JORGE Boniato Chunks
▢

cup
cooked black beans
strained
▢
1
red pepper
stem & seeds discarded
▢
¼
cup
red onion
peeled & diced small
▢

jalapeño
minced
▢
2
tablespoon
Minced Cilantro
▢

cloves
garlic
minced
▢

teaspoons
freshly cracked black pepper
▢
Salt
to taste
▢

Sherry wine vinegar

tablespoons
olive oil
Instructions
Pre-Heat fryer to 350˚
Place one package of TIO JORGE® Boniato chunks and fry for 3-4 minutes
While the boniato’s are cooking combine the vinegar, oil, jalapeño & garlic in a large bowl; mix well.
Add remaining ingredients except for the Boniato; season with salt and pepper.
Add the Boniato and toss gently, adjust seasoning.
