Boniato With Black Bean Salsa

  • 1 package TIO JORGE Boniato Chunks
  • 1 cup cooked black beans strained
  • 1 red pepper stem & seeds discarded
  • ¼ cup red onion peeled & diced small
  • 1 jalapeño minced
  • 2 tablespoon Minced Cilantro
  • 1 cloves garlic minced
  • 2 teaspoons freshly cracked black pepper
  • Salt to taste
  • 1 tablespoon Sherry wine vinegar
  • 2 tablespoons olive oil


  • Pre-Heat fryer to 350˚
  • Place one package of TIO JORGE® Boniato chunks and fry for 3-4 minutes
  • While the boniato’s are cooking combine the vinegar, oil, jalapeño & garlic in a large bowl; mix well.
  • Add remaining ingredients except for the Boniato; season with salt and pepper.
  • Add the Boniato and toss gently, adjust seasoning.
  • Serve
