vegetable oil

For Garnish

baby spinach

picked hearts of frisee

Instructions
Place chorizo in skillet and cook on medium high heatbsp.
Brown.
Add onions, peppers, garlic and oil.
Bring to a boil.
Add rest of ingredients.
Cook for 2 minutes and reserve warm.
For Garnish
. Place spinach and frisee into a bowl.
Add 1 cup of warm dressing.
Toss together gently.
Divide and place on serving plate.
Garnish with fried yuca croutons.
