Spinach Salad With Fried Yuca Chunks, Cotija Cheese And Chorizo Vinaigrette

Ingredients

  • 8 oz. fresh chorizo
  • ¼ cup small diced red onion
  • ¼ cup small diced red bell pepper
  • 2 tbsp. chopped garlic
  • ½ cup vegetable oil
  • ½ cup fresh orange juice
  • ¼ cup apple cider vinegar
  • 2 tbsp. Agave nectar
  • 2 tsp. ground cumin
  • 1 tsp. Kosher salt

For Garnish

  • 8 cup baby spinach
  • 4 cup picked hearts of frisee
  • ¼ cup crumbled Cotija cheese
  • 8 oz. TIO JORGE® yuca croutons pre fried

Instructions

  • Place chorizo in skillet and cook on medium high heatbsp.
  • Brown.
  • Add onions, peppers, garlic and oil.
  • Bring to a boil.
  • Add rest of ingredients.
  • Cook for 2 minutes and reserve warm.

For Garnish

  • . Place spinach and frisee into a bowl.
  • Add 1 cup of warm dressing.
  • Toss together gently.
  • Divide and place on serving plate.
  • Garnish with fried yuca croutons.
