Sweet Plantain Rounds with Chicken Breast and Green Beans

For the Sweet Plantains

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ lemon, grilled or pan-seared (optional for garnish)

For the Green Beans

  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions
 

Bake the Big Banana® Sweet Plantain Rounds

  • Keep oven at 375°F (190°C).
  • Arrange Big Banana® Sweet Plantain Rounds (IQF) in a single layer on a baking sheet.
  • Bake for 12–15 minutes, or until lightly golden brown and heated through.
  • Serve warm or hold covered in warmer until assembly.

Prepare the Chicken

  • Preheat oven to 375°F (190°C).
  • Lightly coat chicken breasts with oil and season with garlic powder, paprika, salt, and pepper.
  • Place on a parchment-lined or lightly greased sheet pan.
  • Bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
  • Hold in warmer until plating.

Sauté Green Beans

  • Heat oil or butter in a steam kettle or sauté pan over medium heat.
  • Add trimmed green beans and optional garlic; cook for 5–7 minutes until tender-crisp.
  • Season lightly with salt and pepper.
  • Hold warm for service.
