Preheat oven to 350˚F
Prepare Rice: Place rice & 28C water in large hotel pans. Cover with foil.
Bake for 20 minutes or until rice is tender.
Prepare plantain slices: increase oven temperature to 375˚F. Place plantains in single layer on large sheet pan. Bake for 12 minutes or until heated through.
Assemble bowl: Place ½ C Rice in bowl. Top with ¾C black bean & corn
salsa and 10 plantain slices (1/2 C). Optional: sprinkle with cilantro
