Vegetable or Canola oil for frying

Avocado Cilantro Crema
For the Avocado Cilantro Crema

ripe avocados
½
cup
sour cream
1
cup
fresh cilantro
1
clove
garlic
juice of 1 lime
¼
teaspoon
salt
Instructions
For the Yuca Fries
Preheat fryer to 350°F
Place the yuca fries, 1lb. at a time in the fryer (do not overload basket) and carefully lower the basket.
Cook for 3-4 minutes. Do not overcook.
Remove from fryer and drain on paper towel lined plate.
Season to taste.
For the Avocado Cilantro Crema
Combine all ingredients in a small food processor.
Blend until smooth
Chill to let flavors combine.
