Yuca Croutons with Avocado-Cilantro Crema

For the Avocado Cilantro Crema

  • 2 ripe avocados
  • ½ cup sour cream
  • 1 cup fresh cilantro
  • 1 clove garlic
  • juice of 1 lime
  • ¼ teaspoon salt


For the Yuca Fries

  • Preheat fryer to 350°F
  • Place the yuca fries, 1lb. at a time in the fryer (do not overload basket) and carefully lower the basket.
  • Cook for 3-4 minutes. Do not overcook.
  • Remove from fryer and drain on paper towel lined plate.
  • Season to taste.

For the Avocado Cilantro Crema

  • Combine all ingredients in a small food processor.
  • Blend until smooth
  • Chill to let flavors combine.
