BIG BANANA sweet plantain slices
Thinly sliced Prosciutto di Parma ham

picked tarragon leaves

baby arugula

toasted almonds

tbsp.
lemon juice

vegetable oil

Parmesan cheese

tbsp.
chopped garlic
Pinch
of Kosher salt
Garnish with
Shaved Pecorino cheese
Picked tarragon leaves
Instructions
Wrap each plantain slice with Prosciutto di Parma and hold with toothpick.
Fry in fryer at 350°F.
Place olive oil, lemon juice, garlic, salt, Parmesan cheese and almonds into a blender.
Puree on medium high speed until smooth.
Add tarragon leaves and arugula and continue to puree.
