Prosciutto Di Parma Wrapped Sweet Sliced Plantains With Pesto And Shaved Pecorino Cheese

  • 16 BIG BANANA sweet plantain slices
  • Thinly sliced Prosciutto di Parma ham
  • ¼ cup picked tarragon leaves
  • ¼ cup baby arugula
  • 1 tbsp. toasted almonds
  • 1 tbsp. lemon juice
  • ¼ cup vegetable oil
  • 3 tbsp. Parmesan cheese
  • 1 tbsp. chopped garlic
  • Pinch of Kosher salt

Garnish with

  • Shaved Pecorino cheese
  • Picked tarragon leaves


  • Wrap each plantain slice with Prosciutto di Parma and hold with toothpick.
  • Fry in fryer at 350°F.
  • Place olive oil, lemon juice, garlic, salt, Parmesan cheese and almonds into a blender.
  • Puree on medium high speed until smooth.
  • Add tarragon leaves and arugula and continue to puree.
