Sweet Plantain Mash with Pork Tenderloin and Roasted Vegetables

Ingredients

For the Sweet Plantain Mash

  • 1 lb Big Banana® Sweet Plantain Mash
  • pinch of cinnamon or nutmeg (optional)

For the Pork Tenderloin

  • 1 lb pork tenderloin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • splash of low-sodium broth or citrus juice (optional)

For the Roasted Vegetables

  • 2 medium carrots, peeled and sliced into coins
  • 1 medium red onion, sliced into wedges
  • 1 tbsp olive oil
  • Salt, pepper, and a pinch of rosemary or thyme

Preparation

Roast the Pork Tenderloin

  • Preheat oven to 400°F (204°C).
  • Rub pork with oil and seasoning.
  • Roast in a shallow pan for 20–25 minutes, or until internal temp reaches 145°F (63°C).
  • Rest 5 minutes, then slice into medallions.

Roast Carrots and Red Onion

  • Toss sliced carrots and onion wedges with olive oil, rosemary, salt, and pepper.
  • Spread on a sheet pan in a single layer.
  • Roast at 400°F for 20 minutes, flipping halfway for even caramelization.

Big Banana® Sweet Plantain Mash

  • Place frozen Sweet Plantain Mash in oven-safe tray.
  • Bake at 400°F for 12–15 minutes, or until golden and heated through.
  • Optional: finish with a dash of cinnamon before serving.
