Breakfast Burrito With Plantain Tidbits

Ingredients

  • 1 tablespoon canola oil or butter
  • 1 cup Big Banana Plantain Tidbits
  • 1 cup Sofrito onion, pepper mix
  • 1 tablespoon Jalapeño minced
  • ¼ cup tomato diced
  • 6 eggs
  • 2 tablespoons milk
  • ½ teaspoon salt
  • teaspoon pepper
  • 4 7 or 8-inch flour tortillas, heated
  • 2 oz. ½ cup shredded hot pepper Monterey Jack cheese

Preparation

  • Add ½ teaspoon of oil/butter to a skillet, over high heat. When the oil is hot, add in the Big Banana Ripe Plantain Tidbits and cook for 1-2 minutes.
  • Add the remaining oil and add the onions, bell peppers, jalapeños, and tomatoes; cook
  • 2 to 3 minutes or until vegetables are crisp-tender, stirring occasionally.
  • In a medium sized bowl, combine eggs, milk, salt and pepper; beat well.
  • Pour egg mixture over vegetables in skillet. Reduce heat to medium; cook 4 to 6 minutes or until eggs are set but still moist, stirring frequently.
  • To serve, spoon egg mixture onto warm tortillas; sprinkle with cheese. Roll up
