Plantain Mofongo With A Crispy Pork Topping

Total Time 30 minutes


  • 1 lbs. BIG BANANA green plantain mash
  • 1 c. pork cracklings cut into ¼ to ½ chunks
  • 2 T. butter
  • 2 tsp. of mashed and chopped fresh garlic
  • Salt & pepper
  • ¼- ½ c. of chicken or vegetable broth


  • In a bowl place green plantain mash and defrost in the microwave for 2 minutes or until warm.
  • Add butter, mashed garlic and pork cracklings and mix well.
  • Add enough broth to moisten lightly.

Serving Suggestion

  • Serve hot with traditional Pulled Pork.
