Sweet Potato Tater Tots Patatas Bravas


For the Garlic Mayo

  • 2 cups neutral oil
  • 2 eggs
  • 1 tsp dijon
  • 6-8 cloves of roasted or confit garlic
  • 2 tsp lemon juice

For the Spicy tomato sauce

  • 1 pint grape tomatoes
  • 2 shallots sliced thin
  • 8 garlic cloves sliced thin
  • 2 fresno chiles
  • 1-2 tsp chili flake
  • 1 tsp tomato paste
  • 1 tbsp sherry vin


For the Garlic Mayo

  • Place ingredients in a mason jar and blend with a stick blender until smooth and creamy.

For the Spicy Tomato Sauce

  • Sauté the shallots and chilies for 2-3 min.
  • Add in the garlic and sauté 1 min.
  • Add in grape tomatoes and cook 3 minutes.
  • Add the chili flake and chili paste and cook 1 min.
  • Deglaze with the vinegar. Break up the tomatoes to release some of that juice.
  • Add 1/2 cup water if needed. Serve rustic or add into a blender and purée.
  • Fry the sweet potato tots and top with the spicy tomato sauce, mayo, and chopped parsley.
