Bacon Wrapped Plantains with a Citrus-Chipotle Glaze

Ingredients

  • 12 BIG BANANA sweet plantain slices
  • 6 slices apple wood smoked bacon cut in half
  • ¼ cup frozen orange juice concentrate
  • ¼ cup apple juice
  • ¼ cup soy sauce
  • 1 cup sugar
  • 2 pieces of Chipotles in Adobo
  • Canola oil for frying

Preparation

  • Preheat fryer to 350°F.
  • Wrap each plantain with the bacon and hold with a toothpick.
  • Fry the plantains until deep golden brown. (Making sure bacon is crispy)
  • Remove plantains to paper towels.

For the Chipotle Glaze

  • Place all the ingredients in the blender and puree.
  • While the blender is running add 2 chilis and taste.
  • Add more if needed. (keep in mind that you will be reducing this sauce and the heat will get more intense.
  • Once you have the heat level, place in a saucepan and heat over medium heat until it begins to bubble.
  • Carefully add the plantains & glaze them with the sauce.
  • Serve
